Nabisco Icebox Cake Recipe

This Nabisco icebox cake recipe is soon to be a family favorite if it isn’t already! It’s so simple, yet so delicious! It’s the original icebox cake recipe that your grandmother used to make and you know and LOVE!

We love this recipe in our family, especially because my 2 and 4 year old daughters can make it themselves! And I love to watch them make it as they are working on their fine motor skills and exercising creativity in whatever they choose to decorate it with!

But let’s get to how you make this original icebox cake recipe!

What you will need:

  • Stand mixer **or hand mixer
  • Loaf Pan **or Tupperware
  • Plastic Wrap

Shopping List:

  • 9 oz Nabisco Chocolate Wafers **or other chocolate wafer cookie
  • 3 c Heavy Whipping Cream
  • 4 tbsp Powdered Sugar
  • 2 tsp Vanilla Extract
  • Sprinkles/Cookie Crumbs/Chocolate Shavings **optional garnish

Directions for this Nabisco icebox cake recipe:

  1. Beat 3 cups of heavy whipping cream in a stand mixer with whisk attachment on medium high speed until cream forms. About 2-3 minutes.
  2. Add powdered sugar and vanilla and mix to combine and fluff until soft peaks form. About 1 minute.
  3. Line loaf pan or Tupperware with plastic wrap. Leave enough plastic wrap over the sides to be able to cover cake later.
  4. Cover the bottom with a thin layer or whipped cream.
  5. Start sandwiching cookies together with a spoonful of whipped cream. Once you have about 3-4 cookies together, stand up in 4 rows of about 8-12 cookies in the loaf pan.
  6. Cover the entire cake with whipped cream. Save remaining whipped cream in the fridge.
  7. Cover cake with plastic wrap and place in fridge for at least 4 hours (or overnight).
  8. Unwrap and turn cake out onto serving platter.
  9. Spread remaining whipped cream over top of cake.
  10. Top with sprinkles/cookie crumbs/chocolate shavings if desired.
  11. Place in freezer for 30 minutes to set before serving!

1. Can I use a different brand of chocolate wafer cookie?

A. Absolutely!  The traditional, Nabisco wafers can be difficult to find!  Goya is one of my favorite substitutes!  Or you can even use Oreos!

2. Can I use store bought whipped cream?

A. Sure!  Homemade whipped cream tends to set up better than store bought but store bought works too!  Just keep it cold!

3. What can I top it with?

A.  You can always just leave it plain with whipped cream and cookies.  BUT…if you want to jazz it up and decorate a little, you can top it with almost anything!  Some of our favorites are: 

  • chocolate shavings
  • chocolate chips (mini/regular)
  • sprinkles
  • cookie crumbs
  • M&M’s
  • Chopped candy bars

4.  Can I add fruit to this cake?

A. Yes!  You can add fruit one of two ways:

  1. Decorate with cut, fresh fruit before placing in the freezer.
  2. Fold a chilled 21oz can of pie filling into the whipped cream before creating cake.  Make as directed.
