3 Ingredient Peanut Butter Cookies with Brown Sugar

These 3 ingredient peanut butter cookies with brown sugar are the EASIEST and most flavorful cookie that bakers of every level can easily master! When I am crunched for time or just don’t want to make a mess of kitchen baking a dessert, THIS is the go-to recipe! They are always a crowd pleaser and never disappoint!

As a mom of two girls that LOVE their sweets this is my favorite recipe to make for them! I know that they are at least getting a LOT of protein when they are eating these peanut butter cookies!

You may have made peanut butter cookies similar to this with granulated sugar but I know that once you try these with brown sugar you won’t go back! Brown sugar just adds a more depth of flavor to peanut butter cookies. Also, they are a lot less “grainy” then when made with granulated sugar.

So…how do you make these 3 ingredient peanut butter cookies with brown sugar?

Let’s start with what you will need.

Equipment needed for this peanut butter cookie recipe:

  • Mixing bowl
  • Wooden spoon
  • 2 Baking sheets
  • fork

You can use whatever spatula you want to mix these cookies, but the dough is thick and sticky so I have found that a wooden spoon works best.

You can also use a stand mixer with the paddle attachment. I just don’t usually do this because I like to keep it easy and less clean up!

Shopping list for peanut butter cookies with brown sugar:

  • 1 c Creamy peanut butter
  • 1.25 c Light brown sugar packed
  • 1 LG Egg

Directions for making these 3 ingredient peanut butter cookies with brown sugar:

  1. Preheat oven to 350F.
  2. Prepare baking sheets by spraying with non-stick spray.
  3. Mix 1 c peanut butter, 1 c brown sugar and egg in mixing bowl with wooden spoon until well combined.
  4. Put remaining brown sugar on a plate or shallow bowl.
  5. Form dough into 12 balls.
  6. Roll each ball in sugar coating it and place at least 2″ away from one another on baking sheet.
  7. Flatten each ball to 3/4″ thick using the palm of your hand.
  8. Using the back of the fork, make an “X” in each cookie flattening a little further.
  9. Bake in preheated oven for 10-12 minutes. Rotate sheet trays halfway through for even baking.
  10. Allow to cool for 5 minutes on sheet trays before placing on cooling rack to cool completely.
  11. Store in an air tight container.

    Love the simplicity fo this recipe and Peanut Butter cookies are one of my favorites… the only thing is no one else in my family likes them and I don’t want to bake a whole batch and feel the need to eat them all myself. These look so good!

      The sweetness is the same and they will have a slightly more robust flavor. You will also notice a difference in color and texture! Brown sugar will give the cookies a darker color (more peanut butter looking than with white sugar). And using brown sugar results in a softer, chewier cookie that holds it shape better (without spreading too much) than with white sugar.
