As a mom of two toddlers, I have a hard time finding a moment to sit and have an actual meal! As soon as I sit, it never fails, that someone needs me for something! Because of that, and because we are constantly on the go, I started having muffins for breakfast almost everyday! However, I can’t just eat the yummy, sugar-filled muffins (Although I have a serious addiction to my Pumpkin Crumb Cake Muffins!). My health is highly important to me! That is why I start almost everyday with a fiber-filled bran muffin!

I know what you’re thinking. How can I eat the same thing everyday? The answer is easy. I mix it up! Some days I eat the muffin plain. But some days I top it with butter, different flavored jams or jellies, or even a fruit compote! I also mix up the mix-ins! Sometimes instead of raisins in the recipe I add Crazins, a dried fruit mix, or fresh fruits like blueberries! These switch ups keep it interesting and keep me on track!

What you need to make these simple, but healthy, bran muffins:

Equipment Needed:

Shopping List:

  • Milk
  • All Bran
  • All Purpose Flour 
  • Baking Soda
  • Baking Powder
  • Salt
  • Brown Sugar
  • Vegetable Oil
  • Egg
  • Lemon Juice 
  • Raisins 

How to make the bran muffins:

  1. Preheat oven to 425F.
  2. Line a 12 count muffin tin with cupcake liners and set aside.
  3. Mix all bran and milk in a small bowl and let sit for 10 minutes.
  4. While waiting, sift together flour, baking soda, baking powder and salt in a medium mixing bowl. Mix well.
  5. In a third bowl, mix brown sugar, oil, egg, lemon juice and raisins.
  6. Mixing by hand, add the bran mixture and oil mixture to the flour mixture.
  7. Pour batter in lined muffin tin. Fill each cup 2/3 full.
  8. Baker at 425F for 15-18 minutes. Or until toothpick comes out clean.
  9. Allow to cool 2 minutes in tin before serving!

How to store leftover bran muffins:

Cool completely before storing leftovers in an air tight container at room temperature for 3-4 days or in the fridge for up to 2 weeks!

  • 1 c Milk

  • 1 c All Purpose Flour **sifted
  • 1 t Baking Soda

  • Sub flaxseed (1 tbsp flaxseed + 3 tbsp water + 5 min. wait = 1 egg) for egg
