Homemade Black Bean Corn Salsa

- 5 Roma Tomatoes remove stem root and cut in half
- 1 can Golden Corn drained
- 1 can Black Beans (undrained) **add another can of drained black beans to add more fiber and reduce heat level if needed
- 1/2 med Red Onion chopped in chucks
- 1 bunch Fresh Cilantro cut off long stems (**okay to leave some stem)
- 1 tbsp Minced Garlic
- 1/2 Lime juice from lime only
- 2 med Jalapeno Peppers remove stem and seeds and cut in half
- 1 tsp Hot Sauce **or to taste
I used to make this salsa as a Pico De Gallo. To make it a Pico:
- Finely chop the onion, tomatoes, jalapenos, and cilantro (removing ALL stems).
- Drain the black beans.
- Mix all ingredients together.
- Serve.
