For Goodness Cake

Tube Pan **or Bundt
For cake:
- 1 box Yellow Cake Mix
- 3 oz Instant Pudding
- 1/2 c Vegetable Oil
- 1 c Sour Cream
- 4 LG Eggs
- 1/4 c Granulated Sugar
- 1/2 c Brown Sugar **firmly packed
- 3/4 c Chopped Walnuts
- 1 tsp Cinnamon
For icing (optional):
- 2 c Confectionary Sugar **sifted
- 4 tbsp Butter **melted
- 1.5 tsp Vanilla Extract
- 2-4 tbsp milk or water **until desired consistency
For Cake:
Preheat oven to 325F. Prepare tube pan by spraying with non-stick cooking spray. Set aside.
Beat cake mix, pudding, oil, sour cream and eggs in a stand mixer for 10 minutes.
In a separate bowl, mix together sugars, nuts and cinnamon.
Set aside 3 T.
Fold the remaining mixture into the cake.
Pour batter into tube pan.
Sprinkle with remaining sugar mixture.
Bake for 60 minutes in pre-heated oven.
Allow to cool in pan completely before removing from pan.
Slice and serve as is OR add a simple glaze.
For Glaze:
Sift powdered sugar into a bowl.
Melt butter and add it to the sugar.
Add vanilla and milk/water as well until you are happy with the consistency.
Pour over removed, cooled cake, allowing it to drip down the sides.
Let set and then slice and serve!
