Equipment

  • Stand mixer
  • Tube Pan **or Bundt

Ingredients
  

For cake:

  • 1 box Yellow Cake Mix
  • 3 oz Instant Pudding
  • 1/2 c Vegetable Oil
  • 1 c Sour Cream
  • 4 LG Eggs
  • 1/4 c Granulated Sugar
  • 1/2 c Brown Sugar **firmly packed
  • 3/4 c Chopped Walnuts
  • 1 tsp Cinnamon

For icing (optional):

  • 2 c Confectionary Sugar **sifted
  • 4 tbsp Butter **melted
  • 1.5 tsp Vanilla Extract
  • 2-4 tbsp milk or water **until desired consistency

Instructions
 

For Cake:

  • Preheat oven to 325F. Prepare tube pan by spraying with non-stick cooking spray. Set aside.
  • Beat cake mix, pudding, oil, sour cream and eggs in a stand mixer for 10 minutes.
  • In a separate bowl, mix together sugars, nuts and cinnamon.
  • Set aside 3 T.
  • Fold the remaining mixture into the cake.
  • Pour batter into tube pan.
  • Sprinkle with remaining sugar mixture.
  • Bake for 60 minutes in pre-heated oven.
  • Allow to cool in pan completely before removing from pan.
  • Slice and serve as is OR add a simple glaze.

For Glaze:

  • Sift powdered sugar into a bowl.
  • Melt butter and add it to the sugar.
  • Add vanilla and milk/water as well until you are happy with the consistency.
  • Pour over removed, cooled cake, allowing it to drip down the sides.
  • Let set and then slice and serve!
