Lazy Housewife Pickles | Easy Pickle Recipe

Lazy Housewife Pickles are a go-to easy pickle recipe for those of us that are into saving money and time! With only six ingredients and hardly any prep time, this easy, homemade pickle recipe will surely soon be one of your favorites as well!

Pickles are one my all-time favorite snacks. I love how low calorie, yet flavorful they are! I never feel guilty even eating an entire jar of pickles in one sitting!

In fact, there are actually several health benefits to eating pickles, such as:

  1. Pickles are a good source of Vitamins C & E, which are antioxidants that help to fight free radicals that can cause cancer and heart disease.
  2. Pickles are a good source of Potassium. Eating pickles can help to replace Potassium lost in sweat. Eating foods high in potassium also help to lower blood pressure/hypertension.
  3. Pickle juice is full of Sodium that can help to rehydrate you and relieve muscle cramps after exercise.
  4. Homemade pickles are fermented which creates a healthy bacteria that boosts you immune system along with Vitamins A, K & C found in pickles that do the same.
  5. The vinegar in pickles helps to regulate blood sugar levels of those with Type 2 Diabetes.
  6. Pickles also support weight loss! The vinegar in pickles has been found to increase fat burning and decrease appetite!

  • Cucumbers (about 2 medium cucumbers)
  • Granulated Sugar
  • White Vinegar
  • Salt
  • Celery Seed
  • Mustard Seed

Directions for making these simple, homemade pickles:

  • Slice cucumbers and place in sterilized jars.
  • Mix the rest of the ingredients (the brine) in a large mixing bowl until sugar and salt have dissolved
  • Pour brine over cucumbers.
  • Seal jars.
  • Place in refrigerator for at least 1 week before opening.

1. Is there a heated brine option?

A. Yes! You can make lazy housewife pickles with a heated brine. To do so, simply heat the brine until boiling. While still boiling, pour over prepared pickles. Seal and store for about 6 weeks with this method.

2. Can you make these pickles in a dill version?

A. Yes! simply adding fresh dill and a clove of garlic to each jar will give these pickles that dill flavor! **I do suggest using the heated brine recipe for this method but allowing the boiling brine to cool before pouring over cucumbers.

3. Can I add other vegetables to this recipe?

A. Yes! I’ve added things such as: onion, carrot, green beans, and asparagus and all have turned out beautifully!

4. What type of cucumbers are best for this recipe?

A. This particular recipe is meant for a standard or English cucumber. However, pickling cucumbers work best for all pickle recipes due to the reduced amount of moisture in them. Pickling cucumbers will result in a crunchier pickle than those made with other cucumbers.

  • 4 8 oz Mason jars with lids sterilized
  • Mixing bowl

Ingredients
  

  • 4 c Cucumbers (about 2 medium cucumbers) sliced anyway you like
  • 1.5 c Granulated Sugar
  • 1.5 c White Vinegar
  • 1 tbsp Salt
  • 1 tsp Celery Seed
  • 1 tsp Mustard Seed

  • Slice cucumbers and place in sterilized jars.
  • Mix the rest of the ingredients (the brine) in a large mixing bowl until sugar and salt have dissolved

You can serve these delicious, homemade pickles all by themselves or with any of your favorite recipes. They make a great burger topper as well as a much needed addition to any sandwich. One of my family’s favorites, is to chop them up and add them to our Classic Sloppy Joes with Tomato Soup! You can also just add them to the bun, but we think it’s fun to add them to the mixture 🙂
