Ingredients
  

  • 6 med Potatoes baked
  • 3 tbsp Butter melted
  • 1 c Sour Cream
  • 1 c Shredded Cheddar
  • 1/3 c Bacon Bits or 4 cooked slices, crumbled
  • 1/4 c Chives
  • 1/2 tsp Salt
  • 1/2 tsp Pepper

Instructions
 

  • Scrub potatoes and poke with a fork.
  • Microwave on high for 10 minutes (turning over after 5 minutes)
  • Cool in fridge until able to handle.
  • Slice potatoes in .5 coins and place in 2 QT microwavable casserole dish.
  • Pour butter over potatoes and season with salt and pepper.
  • Spread sour cream over potatoes.
  • Sprinkle with cheese and bacon.
  • Microwave for 10 minutes.
  • Garnish with chives and serve!
