Ingredients
  

  • 3/4 lb Carrots peeled and julienned (about 3 cups)
  • 1/3 c Orange Juice
  • 2 tbsp Sugar
  • 2 tsp Cornstarch
  • 1/2 tsp Salt

Instructions
 

  • Mix sugar, salt, cornstarch and 1 tbsp of orange juice in a small bowl.
  • Place carrots and remaining juice in a 1.5 QT microwavable casserole dish.
  • Cover and cook on high for 6 minutes,
  • Toss cooked carrots with the cornstarch mixture and return to microwave.
  • Cook UNCOVERED for an additional 2-3 minutes. (stir every minute)
  • Let stand for 5 minutes before serving!
