Equipment

  • muffin tin
  • pastry cutter
  • large mixing bowl
  • whisk

Ingredients
  

  • 2 c all purpose flour
  • 3 tbsp sugar
  • 1 tbsp caraway seeds
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 c buttermilk
  • 1 LG egg
  • 1/4 c cold butter
  • 3/4 c raisins

Instructions
 

  • Preheat oven to 375F.
  • Mix first six ingredients in a large mixing bowl.
  • Using a pastry cutter, cut butter into mixture until it becomes a crumble.
  • In a separate bowl, whisk buttermilk and egg together.
  • Slowly stir into the crumb mixture.
  • Mix in the raisins.
  • Spoon evenly into a greased muffin tin.
  • Bake for 20 min.
  • Serve warm or allow to cool and store in an air tight container.

Notes

**For a lighter tasting muffin, allow ingredients to reach room temperature.
