Equipment

  • large mixing bowl
  • 2 Baking sheets

Ingredients
  

  • 1 c All-purpose flour sifted
  • 1.5 c Walnuts finely chopped
  • 2 tbsp Granulated sugar
  • 1.5 tsp Vanilla extract
  • 1 stick Salted butter at room temperature
  • 1 c Powdered sugar to coat

Instructions
 

  • Mix all dry ingredients (flour, walnuts and sugar) in mixing bowl.
  • Add vanilla and cut butter into dry mixture.
  • With clean hands, mix all ingredients together until it looks like a course meal.
  • Pop the bowl in the fridge for 30 minutes.
  • While dough is chilling, prepared two baking sheets with parchment paper or non-stick spray and preheat oven to 300F.
  • Roll dough into walnut sized balls and place at least an inch apart on prepared sheets.
  • Bake in preheated oven for 35 minutes without opening.
  • When cookies are cool enough to touch, roll each one in powdered sugar and place on a cooling rack.
  • Once completely cool, dust or roll in powdered sugar again.
  • Store in an airtight container.

Q1. Can I use different types of nuts?
A. Absolutely!  One of the most popular substitutes are pecans.  Just make sure nuts are crushed to a small size.
Q2.  Can I use unsalted butter?
A.  Yes!  You can always add a pinch of salt when using unsalted butter for the flavor.  If trying to avoid salt then omission is fine as well!
Q3. Can I make this snowball cookies recipe gluten free?
A.  Sure!  Just substitute King Arthur's 1:1 GF all-purpose flour.
