  • 1 lb chicken trimmed and cut into chunks
  • 1/2 c olive oil
  • 1/2 c brown sugar packed
  • 2/3 c soy sauce
  • 1 tbsp minced garlic
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 1/2 tsp ground ginger
  • 1/2 tsp onion powder
  • 1/4 tsp thyme
  • 1/4 tsp basil
  • 1/4 tsp rosemary

Instructions

  • Trim and cut chicken into chunks.
  • Mix all marinade ingredients in a mixing bowl.
  • Toss chicken in marinade.
  • Cover bowl and let sit in the refrigerator for 2 or more hours. (**See notes for alternative method.)
  • Skewer chicken and cook in desired manner. (**See notes for oven cooking method.)

Notes

**You can use a pre-blended chicken seasoning instead of the: onion powder, thyme, basil and rosemary.
**You may substitute honey for the brown sugar in a 1:1 ratio.
**If skewering with vegetables, soak chicken in marinade while you chop your vegetables.  Skewer chicken and vegetables.  Then pour marinade over complete skewers.  Cover to seal and refrigerate for the 2 hour marinade time.
**To cook, pre-heat oven to 425F.  Place skewers on a greased sheet tray.  Cook for 20 minutes.  Turn oven to broil and broil for 2-5 minutes for more color on your kabobs.
